Sweet Beef Stew recipe
This sweet beef pie is full of delicious wholesome flavours - the beef is cooked with tasty vegetables, including celery, carrot, and onion, and is simmered with tomato ketchup, lemon juice and honey. The ingredients may sound a little strange, but when combined together they create a sweet, deeply flavoured sauce.
Ingredients:
- 1kg beef stewing steak
- 2 tbsp. olive oil
- 1 onion
- 2 carrots
- 2 celery sticks
- 1 green pepper
- 500ml beef stock
- 2 tbsp. honey
- 2 tbsp. lemon juice
- 2 tsp. mustard
- 4 tbsp. ketchup
- Salt and pepper
Method of Preparation:
Finely chop all the vegetables. Heat the oil in a saucepan and fry them for ten to fifteen minutes, until softened and browned.
Mix together the honey, mustard, lemon juice, ketchup and stock.
Put the beef and vegetables into a casserole dish, pour over the stock mixture and place into a 170C oven for four-five hours, stirring every hour.
Alternatively, you could brown the meat in more oil after tossing with flour before adding to the casserole dish. This will give more texture to the sauce, although the dish will be just as tasty without this step.
