Crispy Chinese Beef recipe

This authentic Chinese recipe combines hot, crispy steak with an aromatic ginger and vegetable sauce that's perfect for serving over rice. Alternatively, you could cook more beef and serve it with the sauce on the side as a dip.

Ingredients:

  • 350g lean beef steak, thinly sliced
  • 4 tbsp. corn flour
  • Pinch of salt
  • Pinch of black pepper
  • 1 litre of oil for frying
  • 1 small onion
  • 1/2 red pepper
  • 2 cloves of garlic
  • 3 tbsp. freshly chopped root ginger
  • 85g caster sugar
  • 4 tbsp. soy sauce
  • 1 1/2 tbsp. honey
  • 2 tbsp. rice wine vinegar
  • 4 tbsp. water
  • 2 tsp. chilli paste
  • 1 tbsp. vegetable oil

Method of Preparation:

  1. Heat oil in deep fat fryer to 190C. Season the corn flour with the salt and pepper.

  2. Toss the sliced steak into the corn flour mixture and coat well.

  3. Deep fry the steak for 2-3 minutes until golden brown and cooked in the middle, then set to one side on kitchen paper whilst you make the sauce.

  4. Combine the soy sauce, vinegar, honey, sugar, chilli paste, water and ginger in a small bowl and set to one side.

  5. Dice the pepper and the onion and thinly slice the garlic clove.

  6. Heat a wok over a high heat and add the oil. Once hot, stir fry the onion, pepper and garlic for thirty seconds. Add the ginger mixture and cook for another 30 seconds, then add the steak strips and cook for another 30 seconds before serving.

For those who like it hot, add another couple of teaspoons of chilli paste. This recipe serves four people.
