Homemade Corn Beef recipe

Corned beef is a lovely meat, perfect for serving in sandwiches, cooked with onions and potatoes in a hash or fried and served on toast. Make it at home yourself for tender, flavourful beef that literally falls apart.


  • 1.5kg silverside beef fillet
  • 2 tbsp. brown sugar
  • 125ml white wine or red wine vinegar
  • 50g whole cloves
  • 50g black peppercorns
  • 2 whole fresh bay leaves

Method of Preparation:

  1. Place the meat into a large saucepan. Cover with water. Stir in the sugar, vinegar, cloves, peppercorns and bay leaves.

  2. Bring to the boil, then reduce to a simmer and cook for 4 hours.

  3. Remove the beef from the pan, scrape off any fat, then leave to cool. Slice or shred as desired to serve. Use cooking liquid for stock or soup.

Serve this beef with some spicy English mustard and a handful of chips, or even with some thick white bread and butter. Recipe serves 12.
